Mickael Viljanen was born in Stockholm, Sweden, but grew up in Finland. After some time spent in the UK he moved to Ireland in 2000, and has worked with Paul Flynn at The Tannery, before spending five years at Gregans Castle where he won Chef of the Year and Restaurant of the Year from Food & Wine magazine, and also won RAI Chef of the Year. In 2012, he opened The Greenhouse in Dublin where he went on to win Food & Wine magazine's Chef of the Year twice, most recently in 2019. The Greenhouse also won Restaurant of the Year in 2012 and Chef of the Year in 2019, both in the Georgina Campbell Guide. On September 16, in 2015, Mickael entered the Michelin Guide with one star, then in October, 2019 the restaurant won its second stat under his leadership, making it one of only two restaurants in Dublin with this accolade. Mickael has travelled extensively over the years, to Hong Kong, Scandinavia, the UK and beyond. He has also appeared on Master Chef Ireland as a guest judge in 2012 and judged the San Pellegrino World Young Chef final in London in 2018. Mickael is also a Chef Ambassador for the prestigious Krug Champagne house .
