What’s On at Soneva

Ming-fai Choi is a Michelin-starred chef from Hong Kong, best known for his refined, contemporary approach to Chinese cuisine.  As the former Head Chef of Mora, Fai led the restaurant to earn both its first Michelin star and Michelin Green Star, achievements that reflect his dedication to sustainability and craftsmanship. Named the MICHELIN Young Chef 2024 recipient, Fai is recognised for presenting local flavours with modern techniques, creating dishes that celebrate seasonality and transform humble local ingredients into elegant, expressive creations. Rooted in a deep respect for nature, Fai’s cuisine explores the cultural identity of Hong Kong while blending East and West. Through his work, he continues to shape a modern interpretation of Hong Kong’s culinary voice on the global stage.

Adam Holtzinger is a co founder of KEEP, a Brooklyn studio specialising in handblown glass lighting and sculptural glassworks. With more than 25 years of experience in glass and design, he creates original collections and collaborates on bespoke commissions for leading artists, designers and architects. His pieces appear in museum exhibitions internationally, as well as in commercial and private spaces, and have been featured in publications including The New York Times. Susan Špiranović is a Croatian American glass artist whose practice explores the relationship between material and heritage, using glass to examine history and reimagine tradition. Her work has been exhibited at the Brooklyn Museum, and her approach brings a strong narrative lens to contemporary craftsmanship. Together, Adam and Susan share their process through live demonstrations and workshops, offering guests an inside view of handblown glass making, from technique and design to the care and precision behind each finished piece.    

Hortensia Corredoir will be joining us at Soneva Fushi from March 16 to April 5, continuing to Soneva Jani from April 7 to April 13. With over 15 years of experience, Hortensia Corredoira is a highly respected osteopath and physiotherapist whose work bridges science, movement and emotional healing. She has collaborated with the United Nations, Olympic Sports Federations and leading private clinics around the world, drawing on an academic background that includes a Master’s in Osteopathy and degrees in Sports Education and Physiotherapy. Originally rooted in traditional osteopathy, Hortensia’s approach has evolved to reflect a more holistic understanding of the body—recognising the profound impact that stress, emotion and unresolved trauma can have on physical wellbeing. Her treatments are deeply personalised, combining structural, craniosacral and biodynamic techniques to uncover the root of each concern. Guided by intuition and grounded in science, Hortensia offers a multi-faceted pathway to healing that restores balance, resilience and harmony to the whole self.

Lulu Winfield has been practising reflexology since 2001 and is much sought after as a women’s wellness specialist in London. She is a bodyworker, senior women’s health yoga teacher and teacher trainer, birth coach and an original founding member of Doula UK.      Lulu specialises in supporting people through conception, the pre- and post-natal period and the stages of menopause. She also practices reflexology with couples and treats whole families together. She subtly weaves breathwork and meditation into each bespoke treatment to stimulate the parasympathetic nervous system, reduce stress and access a state of profound relaxation, leaving her clients feeling centred and in a state of deep and blissful peace.  

Chef Eelke Plasmeijer began his culinary journey at 14 in a small restaurant in his Dutch village. After training at hotel school and working in several Michelin-starred kitchens, he moved to Jakarta, where he became Head Chef and met Ray Adriansyah, then his Sous Chef. Their shared philosophy and curiosity for Indonesia’s rich biodiversity soon led them to Ubud, where they ran the kitchens of a boutique hotel and began shaping the vision that would define their careers: a restaurant built entirely around local ingredients. Twelve years later, that vision has evolved into the Locavore Group – an ecosystem of award-winning restaurants and bar concepts that explores Indonesia’s extraordinary produce through contemporary, creative expression. In late 2023, Locavore transformed into Locavore NXT, a progressive culinary experience that pushes their “local ingredients only” ethos further than ever before. More than a restaurant, it reflects Chef Eelke’s deep respect for nature, community and craftsmanship, and his commitment to redefining Indonesia’s culinary narrative on the global stage.

Peter Crouch will be joining us at Soneva Fushi from March 30 to April 4, continuing to Soneva Jani from April 4 to April 9. Peter Crouch’s journey began on football pitches across England, where his distinctive presence and natural talent quickly set him apart. Rising through the ranks of professional football, he went on to represent some of the Premier League’s most iconic clubs, including Liverpool, Tottenham Hotspur and Stoke City, while earning over 40 caps for the England national team. Known for his aerial ability, technical skill and sharp footballing intelligence, Crouch became a key figure on the international stage, playing in multiple World Cups and European Championships. Beyond his playing career, Peter has evolved into a respected voice in modern football. As a broadcaster, podcaster and author, he brings wit, insight and honesty to conversations around sport, wellbeing and life after elite competition. Today, his work reflects a growing passion for health, movement and balance, as well as a commitment to inspiring others to stay active and curious at every stage of life – proving that reinvention, much like excellence, is a lifelong pursuit.

Jonas Björkman will be joining us at Soneva Fushi from April 4 to April 9, continuing to Soneva Jani from April 9 to April 14. Jonas Björkman is a Swedish former professional tennis player with a highly successful career in both singles and doubles, known for his nine Grand Slam doubles titles. Björkman was ranked World No. 1 in doubles, a position he achieved on July 9, 2001, and World No. 4 in singles, a career-high he reached in 1997. Over his 18-year career, he won six singles titles and an impressive 54 doubles titles on the ATP Tour, including a rare career Grand Slam in men’s doubles. Björkman’s singles highlights include reaching the semifinals at the US Open in 1997 and, notably, at Wimbledon in 2006, where at 34, he was the oldest player to reach that stage since Jimmy Connors in 1987. Following his retirement from professional play in 2008, he has remained involved in the sport, serving in coaching roles for players like former World No. 1 Andy Murray and Marin Čilić. Björkman has also worked as a tennis commentator and served as a captain for Sweden’s national padel team. 

Paris Norriss will be joining us at Soneva Fushi from April 4 to April 9, continuing to Soneva Jani from April 9 to April 14. Paris Norriss is a world-record endurance athlete and ocean adventurer, shaped by a lifelong relationship with nature and an unrelenting drive to explore the unknown. From pioneering long-distance ocean rows to undertaking expeditions in some of the world’s most remote and demanding environments, his journey is defined by resilience, curiosity and a deep belief in the boundless potential of the human body and mind. Through immersive rowing and diving sessions, alongside inspiring talks, Paris shares the lessons forged in extreme conditions – staying composed under pressure, adapting in the face of uncertainty and moving with purpose. Bridging adventure, wellbeing and environmental awareness, his work invites others to reconnect with the natural world, challenge perceived limits and discover strength, both in and beyond the water.
