Teresa Gutiérrez was originally going to follow a career in odontology, but left partway through her studies to pursue her dream of becoming a chef. After learning her trade at prestigious culinary schools in Valencia, Spain, and Avignon, France, she honed her skills at a series of Michelin-starred restaurants before opening her own, Azafrán, in La Mancha, Spain, in 2008.
Fully staffed by women, Azafrán has been awarded a Bib Gourmand by the Michelin Guide and a Sol from Spain’s highly respected Repsol Guide. Focusing on regional cuisine, Gutiérrez works with the finest locally-sourced ingredients, like Manchego cheese, Manchego lamb, mushrooms and locally-reared meat. Having also studied health and nutrition, she understands the importance of maintaining the innate properties of food to create a well-balanced diet, and is a member of the Culinary Advisory Council on the Mediterranean Diet for the Torribera Mediterranean Center (a joint initiative between the University of Barcelona and the Culinary Institute of America).
As well as being head chef of Azafrán, Gutiérrez is an official ambassador for La Mancha saffron, has competed in Spain’s Top Chef TV show, and was a pastry teacher for Spain’s online Master Chef school. She also regularly participates in gastronomic conferences across the world, including Madrid Fusión, San Sebastián Gastronómica, Alimentaria Barcelona, Worlds of Flavor in California and the Culinary Institute of America’s Menus of Change.
