Glide along a 200-metre zipline to reach this open-air platform, nestled above the forest canopy with panoramic views over the jungle and shimmering sea. Begin with refreshing infusions and playful canapés served in the open sky, then explore a seasonal menu that honours island ingredients and culinary creativity.
Whether it’s a sunrise breakfast or starlit dinner, each moment is thoughtfully crafted to honour nature and nourish the soul. A rotating residency of acclaimed Michelin-starred chefs like Pascal Barbot, Alberto Faccani, Tim Raue, and more, adds a final flourish, transforming elevated dining into something truly unforgettable.
Daylight hours for breakfast, high tea and dinner
Flying Sauces has a maximum capacity of 16 guests.
Indoor and outdoor seating is available for a range of bespoke celebrations and events.
The zipline takes a scenic route through the forest at a height of 5 to 10 metres – with towering platforms and rope bridges along the way, it ends at an elevated dining tower, raised 12 metres above the ground with exceptional views over the ocean. Operating during daylight hours only, the zipline takes approximately 1 hour 15 minutes; the Flying Sauces dining experiences take an additional 1 hour for breakfast and high tea, and 2 to 3 hours for dinner. Each Flying Sauces experience is suitable for a maximum 10 to 12 guests aged 8 and above, divided into 2 groups of 6 guests.
