Flying Sauces is hosting an exclusive residency by Korean Chef Jun Lee and his team from two Michelin-starred restaurant SOIGNÉ from October 15, 2024, to January 10, 2025.

Korean chef Jun Lee and his team from two Michelin-starred restaurant SOIGNÉ will be presenting a menu that showcases the essence of SOIGNÉ in the Maldives, giving the art of cuisine a distinct island twist from October 15, 2024, to January 10, 2025 at Soneva Fushi’s Flying Sauces.

Chef Jun is renowned for his commitment to creating an exceptional gastronomic journey, blending traditional Korean flavours with innovative techniques. His dedication to using the freshest, locally-sourced ingredients and his incredible attention to detail have earned SOIGNÉ its reputation as a premier dining destination. SOIGNÉ, meaning “well-groomed” in French, reflects Jun’s commitment to presenting a refined dining experience. Each dish is a testament to his creativity and skill, offering diners an unforgettable experience that celebrates the essence of Korean cuisine seamlessly integrated with French, Italian, and American culinary techniques.

During the Flying Sauces residency, the team from SOIGNÉ will be working alongside chef Jun to deliver an exceptional dining experience.

Meet Chef Jun Lee

Jun Lee’s passion for cooking was ignited during his formative years, leading him to pursue a major in Culinary Arts at Kyung Hee University in Seoul. After learning under the guidance of Chef Susur Lee at Madeline’s, he joined the Culinary Institute of America. During his time in New York, Jun also honed his craft at Thomas Keller’s three Michelin-starred restaurant Per Se and Jonathan Benno’s Michelin-starred Lincoln.

Returning to Seoul, Jun showcased his culinary prowess through a series of dining parties and pop-up restaurants, with each experience shaping his philosophy and understanding of fine dining. His vision culminated in the birth of SOIGNÉ in 2013, where Jun seamlessly integrated French, Italian and American culinary techniques with the essence of Korean cuisine.

The zipline was a wish of our Creative Director and Conscience, Eva Malmström Shivdasani. It was first inspired 15 years ago by a visit to Costa Rica, where ziplining through beautiful rainforests and picturesque national parks is a favourite past-time for locals and visitors alike. Originally, Eva planned our Soneva Fushi zipline to descend from the Turtle Beach Champa to Fresh in the Garden, so guests could enjoy a drink near the beach before soaring down to dinner. 

Eventually, Sonu found the ideal setting, surrounded by the lush jungle between The Den and Dolphin Beach, and decided to also add a restaurant. The 200-metre trail winds its way through the trees, before arriving at the elevated open kitchen and treetop dining platform, perfectly positioned to maximise the magical vistas over the sparkling sea.

Taking fine dining to exhilarating new heights

Flying Sauces is the world’s first fine dining zipline experience. Glide along the 200-metre zipline route through the leafy jungle to our treetop table and open kitchen – at 12 metres above the ground, it has exceptional views across the sparkling ocean. The menu is expertly paired with a selection of wines from our extensive cellars, which house the largest collection of wines and Champagnes in the Indian Ocean.
