During his 30-year career as a professional chef, Thomas worked in some of Denmark’s top establishments, including as Head Chef and Director of the Michelin-starred Restaurant Kong Hans Kaelder in Copenhagen from 1996 to 2014. He left to pursue his dream of combining a passion for teaching physical outdoor training with the healthy benefits of eating high-quality whole foods. Since then, he has practiced as a functional lifestyle coach at the Kurhotel Skodsborg, a renowned spa hotel, north of Copenhagen. He has travelled the world, cooking food for guests with high expectations, from Nuuk in Greenland and Hermanus in South Africa, to Tokyo, Japan and Galway, Ireland. He has also been a regular guest chef at our resorts in the Maldives and Thailand.
Thomas will be hosting exclusive dinners at Soneva Fushi and Soneva Jani from November 23, 2021, to December 4, 2021, introducing guests to his culinary world, transforming the finest local ingredients into an indulgent gastronomic experience.
