Italian chef Mauro Panebianco has been serving guests at the renowned Moscow restaurant Cantinetta Antinori since its opening in 2004. Trained at the Institute of Hotel Restaurant Business in the city of Stresa in Italy, Mauro’s career began with immersive experiences across a variety of restaurants in culinary and pastry kitchens.

His distinctive style began to gain recognition when he worked in Milan at the Four Seasons Hotel, where he learned the art of confectionery, then as the Pastry Chef at the Relais & Chateaux San Felice in Siena and at the Eden Hotel in Rome with the famous La Terrazza restaurant. This led to his role in the opening of the Giorgio Armani restaurant in Munich, and finally, an invitation to work in Russia where he now resides. In 2021, Mauro won Chef of the Year in the Keeper of the Classics category at the Restaurant Industry’s Palm Branch Award.
Chef Mauro’s philosophy is to bring joy to his guests by offering exquisite simplicity and taste, that combines a passion for new experiences with a fresh look at seasonal ingredients. Guests can expect elevated Italian cuisine that celebrates each ingredient with elegance.
