Bart De Pooter is a prominent Belgian chef, best known for his two-Michelin-starred restaurant Pastorale, which also received a 17/20 rating in the Gault Millau guide and was selected as Belgium’s best vegetarian restaurant in 2018. Bart’s cuisine is marked by balance, simplicity and pureness. He is continuously looking for techniques that intensify the taste of a product. The vegetables for his restaurants come from his own garden or local producers and are harvested when their flavour is optimal.
In 2022, Bart is set to open two plant-based restaurants in the city of Antwerp. The restaurants, WILDn and PLANTn, are both located within the historical landmark of The Sapphire House and will bring a unique plant-based journey, from breakfast, brunch, and lunch to dinner and room service.
