Flying Sauces is hosting an exclusive residency by Danish Chef Mark Lundgaard and his team from two-Michelin-starred Kong Hans Kaelder from January 15, 2025 to March 10, 2025.

Mark Lundgaard, the acclaimed head chef and director of the two-Michelin-starred Kong Hans Kælder in Copenhagen, Denmark, brings his passion for culinary artistry to life in one of the city’s most historic settings. Established in 1976, Kong Hans Kælder holds the distinction of being Denmark’s first Michelin-starred restaurant, housed in Copenhagen’s oldest building at the heart of the city centre. Since taking the helm as the restaurant’s fourth head chef, Mark has elevated Kong Hans Kælder to new heights, earning its prestigious second Michelin star in 2021.

Chef Mark’s philosophy revolves around respecting ingredients, their origins and the meticulous craftsmanship required to transform them into unforgettable dishes. Combining the elegance of classic French cuisine with the refined minimalism of new Nordic gastronomy, he curates a menu that exemplifies culinary excellence. His inspirations are drawn from antique cookbooks and evocative descriptions of grand feasts in literature, blending tradition and innovation to create a sensory dining experience.

During the Flying Sauces residency, the award-winning team from Kong Hans Kaelder will be working alongside chef Mark to deliver an exceptional dining experience.

Meet Chef Mark Lundgaard

Mark Lundgaard’s passion for cooking was shaped during his early years in Southern Jutland, where he grew up in Egernsund. His culinary journey began with formal training at Restaurant Fakkelgården, laying the foundation for his expertise.
Over the years, Mark perfected his craft in renowned French-inspired kitchens, including Ruths Hotel in Skagen, Restaurant Sletten, Falsled Kro and international establishments like Lebzelter Obauer in Austria, Alinea in Chicago, and L’Auberge De L’Ill in Alsace. Drawing inspiration from antique cookbooks and vivid depictions of grand feasts in literature, Mark has cultivated a distinctive culinary style that shines at Kong Hans Kælder.

Flying Sauces is the world’s first fine dining zipline experience. Glide along the 200-metre zipline route through the leafy jungle to our treetop table and open kitchen – at 12 metres above the ground, it has exceptional views across the sparkling ocean. The menu is expertly paired with a selection of wines from our extensive cellars, which house the largest collection of wines and Champagnes in the Indian Ocean.
