Chef Wassim’s culinary philosophy is an ode to nature, shaped by his surroundings and the ever-evolving landscape of gastronomy. His approach is a harmonious fusion of French haute cuisine and the innovative spirit of New Nordic cooking enriched by global influences that ignite his creativity.

At Frederikshøj in Aarhus, his relentless pursuit of perfection is reflected in his dedication to the finest local ingredients. He thrives on experimentation, constantly pushing the boundaries of flavour, texture and technique to craft dining experiences that linger long after the last bite. For him, each dish is a journey—an opportunity to refine, reimagine and elevate the art of cooking, always striving to be a little better tomorrow than today.

In the Maldives, Chef Wassim and his team will weave Frederikshøj’s distinctive culinary identity with the exceptional bounty of this tropical sanctuary, creating a dining experience that is both unexpected and unforgettable.

Meet Chef Wassim Hallal

Wassim Hallal’s culinary journey is a tale of passion, precision and an unyielding pursuit of excellence. He moved to Denmark in 1985 and, after honing his craft in some of the country’s finest restaurants, opened Frederikshøj in 2009. Nestled within the former staff lodge of the Royal Palace, the restaurant was awarded its first Michelin star in 2015 and its second in 2022. That same year, Wassim was honoured with the prestigious Chef Mentor Award.

His menus are a symphony of flavour, artistry and intuition – refined yet unbound by convention. Guided by the rhythm of the seasons, he creates dishes that are both technically exquisite and deeply personal, each one a testament to his reverence for exceptional ingredients. He believes that care, excitement and dedication are not only seen but tasted, leaving an imprint that lingers long after the final bite.

Beyond the kitchen, Wassim has shared his culinary vision through celebrated cookbooks and appearances on Hell’s Kitchen Denmark and MasterChef Denmark. A devoted ambassador for the Aarhus region, he continues to shine a light on the richness of local produce, weaving creativity and precision into every plate.

Taking fine dining to exhilarating new heights

Flying Sauces is the world’s first fine dining zipline experience. Glide along the 200-metre zipline route through the leafy jungle to our treetop table and open kitchen – at 12 metres above the ground, it has exceptional views across the sparkling ocean. The menu is expertly paired with a selection of wines from our extensive cellars, which house the largest collection of wines and Champagnes in the Indian Ocean.
