Wassim Hallal’s culinary journey is a tale of passion, precision and an unyielding pursuit of excellence. He moved to Denmark in 1985 and, after honing his craft in some of the country’s finest restaurants, opened Frederikshøj in 2009. Nestled within the former staff lodge of the Royal Palace, the restaurant was awarded its first Michelin star in 2015 and its second in 2022. That same year, Wassim was honoured with the prestigious Chef Mentor Award.
His menus are a symphony of flavour, artistry and intuition – refined yet unbound by convention. Guided by the rhythm of the seasons, he creates dishes that are both technically exquisite and deeply personal, each one a testament to his reverence for exceptional ingredients. He believes that care, excitement and dedication are not only seen but tasted, leaving an imprint that lingers long after the final bite.
Beyond the kitchen, Wassim has shared his culinary vision through celebrated cookbooks and appearances on Hell’s Kitchen Denmark and MasterChef Denmark. A devoted ambassador for the Aarhus region, he continues to shine a light on the richness of local produce, weaving creativity and precision into every plate.
Flying Sauces is the world’s first fine dining zipline experience. Glide along the 200-metre zipline route through the leafy jungle to our treetop table and open kitchen – at 12 metres above the ground, it has exceptional views across the sparkling ocean. The menu is expertly paired with a selection of wines from our extensive cellars, which house the largest collection of wines and Champagnes in the Indian Ocean.
The Flying Sauces zipline takes a scenic route through the forest at a height of five to ten metres – with towering platforms and rope bridges along the way, it ends at an elevated dining tower, raised 12 metres above the ground with exceptional views over the ocean. Operating during daylight hours only, the zipline takes approximately one hour 15 minutes; the Flying Sauces dining experiences take an additional one hour for breakfast and high tea, and two to three hours for dinner. Each Flying Sauces experience is suitable for a maximum 10 to 12 guests aged eight and above, divided into two groups of six guests.
