Flying Sauces is hosting an exclusive residency by British chef Michael Wignall and his team from one-Michelin-starred restaurant The Angel from February 8 to May 8, 2024.

British chef Michael Wignall and his team from The Angel will be presenting a menu that showcases his award-winning signature style during an exclusive 13-week pop-up from February 8 to May 8, 2024 at Soneva Fushi’s Flying Sauces.

Chef Michael is renowned for producing incredibly complex and technically accomplished dishes, each characterised by an acute attention to detail. Dedicated to the pursuit of perfection in flavour, texture and appearance, he has travelled extensively from the Far East to the United States and across Europe to find new inspirations and ideas to pair with locally-sourced produce. His menu at Flying Sauces will honour local Maldivian ingredients and the freshest crops from Soneva Fushi’s organic gardens.

During the Flying Sauces residency, the team from The Angel will be working alongside chef Michael to deliver an exceptional dining experience.

From The Den to Dolphin Beach.

Meet Chef Michael Wignall

Chef Michael’s professional career started at Broughton Park under Paul Heathcote. He earned his first Michelin star in 1993 and has since held stars in every kitchen he has headed, including two Michelin stars and five AA rosettes at Gidleigh Park in Chagford, Devon, and at The Latymer at Pennyhill Park in Bagshot, Surrey. In 2018, he purchased The Angel at Hetton, set in the UK’s Yorkshire Dales National Park, where he gained a Michelin star within its first year of opening. He is widely considered to be one of the most respected chefs in the UK.

The zipline was a wish of our Creative Director and Conscience, Eva Malmström Shivdasani. It was first inspired 15 years ago by a visit to Costa Rica, where ziplining through beautiful rainforests and picturesque national parks is a favourite past-time for locals and visitors alike. Originally, Eva planned our Soneva Fushi zipline to descend from the Turtle Beach Champa to Fresh in the Garden, so guests could enjoy a drink near the beach before soaring down to dinner. 

Eventually, Sonu found the ideal setting, surrounded by the lush jungle between The Den and Dolphin Beach, and decided to also add a restaurant. The 200-metre trail winds its way through the trees, before arriving at the elevated open kitchen and treetop dining platform, perfectly positioned to maximise the magical vistas over the sparkling sea.

Taking fine dining to exhilarating new heights

Flying Sauces is the world’s first fine dining zipline experience. Glide along the 200-metre zipline route through the leafy jungle to our treetop table and open kitchen – at 12 metres above the ground, it has exceptional views across the sparkling ocean. The menu is expertly paired with a selection of wines from our extensive cellars, which house the largest collection of wines and Champagnes in the Indian Ocean.
