Area Director of Food and Beverages, Maldives
My pre-work routine
I usually wake-up around 05:45 in the morning, say my prayers, read a few case studies, a book or go through some courses. Then I hit the gym for 30 or a little over 30 minutes to get in some jogging to work on my cardio. I make it back to my room to take shower and report to duty just before 08:00.
The morning briefings
Every morning I hold a meditation session with my team for 15 minutes. After that we discuss the previous night’s guest events, my team’s movements for the day and any way that they can improve their service. This is followed by the Heads of Teams (HOTs) morning briefing from 08:30 to 09:00. Then we head to breakfast where we meet and mingle with guests during breakfast hours. I take my breakfast between at 10:30 and 11:00, in between attending to the arrival and departure of guests to Soneva Fushi.
Once the breakfast rush is over I spend time in the office answering emails and admin until noon prayer. Admin can include working on team goals, SMM minutes, coming up with new innovations or meeting individually with team members. After prayer I visit the lunch service areas to make sure all dining outlets are ready for service. I may take an afternoon break, sometimes squeezing in an hour-long nap. Or if my family is visiting I’ll spend spend time with them, if they aren’t on the island I’ll give them a call to touch base. You might also find me exercising sometimes, depending on operations or if the mood strikes.
As evening draws in
I leave my quarters for evening service before sunset, here I’ll mingle with guests again, ask them how their day has been, did they enjoy a particularly fantastic meal? I’ll visit all the outlets once again to check on their operational readiness for dinner. If I have to I’ll stay and help the Hosts and manager for whichever outlet is in need of assistance until service gets smoother.
Going back to the office to deal with any office work usually happens around 21:00. I’ll take my dinner in the main kitchen, work for an hour or two, depending on the day. Finally I’ll return to my room, shower and perform prayer. To unwind I’ll call up my friends and family, maybe put on a film or read.
My day truly comes to a close as I fall asleep while talking on the phone with my wife!
